    Abstract:

    Mycotoxins are widely present in agricultural products, posing a severe threat to human and animal health. As a group of recognized safe microorganisms, lactic acid bacteria have great application potential in the biological detoxification of food, with low cost and no adverse impact on food quality and the environment. By reviewing the recent research progress in this field, we introduced the detoxification effects (inhibition of fungal growth and adsorption and degradation of toxins) of lactic acid bacteria on several common mycotoxins in food and feed, with focuses on the practical application of lactic acid bacteria in biological detoxification. This review aims to provide theoretical guidance for the application of lactic acid bacteria in food preservation.
