Lactobacillus plantarum was treated with UV, the exhibited good stability obtained by a screening to tow mutants with cholesterol gradient plate and Cholesterol-degrading testing in vitro. Among which the rate of Cholesterol-degrading of Lp-UVs 29 and Lp-UVs 44 are respective 48.7% and 44.2%, which raise respectively by 97.97% and 79.67%.
